When Tom Levkulic and his wife, Jennifer, took over the reins of this thirty-year-old diner in Pennsylvania coal country, they made one seemingly minor but in fact monumental change from the way the previous generation ran it. They switched from instant mashed potatoes to real ones. "In this town, where people know good food and appreciate it, we thought it was just plain wrong not to do the work to serve real potatoes," Tom told us.
